Production Manager (Restaurant)

Our client is seeking to hire an experienced and highly organized Production Manager to oversee food production operations at their busy establishment. The ideal candidate will be responsible for production planning, staff supervision, food quality consistency, stock control, and ensuring seamless kitchen efficiency.

Key Responsibilities:

  • Production Planning & Execution
  • Develop daily/weekly production schedules based on sales forecasts and par levels
  • Ensure all food items are prepared, portioned, and ready for service on time
  • Enforce recipe accuracy and consistent product quality
  • Coordinate production for dine-in, takeaway, delivery, and bulk orders
  • Kitchen Team Leadership
  • Supervise and mentor cooks, prep staff, and production assistants
  • Allocate duties and ensure prep/closing checklists are completed
  • Provide continuous training on recipes, equipment, and standards
  • Quality Control
  • Ensure dishes meet taste, presentation, and portion standards
  • Conduct tasting sessions and enforce recipe adherence
  • Maintain consistent quality across all production shifts
  • Stock Management & Cost Control
  • Track daily raw material usage and reconcile with output
  • Monitor stock levels to prevent shortages and wastage
  • Apply FIFO, proper storage, and accurate ordering
  • Participate in stock-taking and variance reporting
  • Hygiene, Safety & Compliance
  • Enforce HACCP, food safety, and sanitation guidelines
  • Conduct hygiene inspections and manage cleaning schedules
  • Report equipment issues and train staff on safety protocols
  • Communication & Coordination
  • Coordinate with procurement, FOH, and delivery teams
  • Report shortages, delays, or operational bottlenecks

Qualifications & Skills:

  • 2+ years experience in a kitchen supervisory or production role
  • Experience in production/centralized/catering kitchens is a strong advantage
  • Strong understanding of kitchen operations and food preparation
  • Leadership, organizational, and decision-making skills
  • Knowledge of food safety, hygiene, and compliance standards
  • Familiarity with inventory systems & production planning tools
